Cheesy tortellini casserole
Ingredients:
pint of light whipping cream
pint of heavy cream
stick of butter
package of mozzarella cheese
16-18oz.cheese tortellini (use fresh or refrigerated. if frozen, pre-cook)
breadcrumbs (seasoned or unseasoned--your choice)
grated parmesan cheese--fresh
ground pepper
You can adjust ingredient amounts pretty easily depending on how much you
want to make. Generally use a 9x13 lb...(a little of this dish goes a long way) The important thing is that the dish you use has enough cream in it to just cover the tortellini, and enough cheese, butter, breadcrumbs for your taste.
Instructions:
- Pre-heat oven to 400 degrees
- Place tortellini in a casserole dish.
- sprinkle 3/4 of the cheese over the tortellini evenly.
- Pour even amounts of both creams over the tortellini until just covering it.
- Sprinkle the rest of the mozzarella cheese over the top.
- cover evenly with parmesan cheese
- Cover with breadcrumbs.
- Cut stick of butter into slices and place slices strategically over breadcrumb topping.
- Grind pepper lightly over top for taste.
- Cover with aluminum foil.
- Cook in oven for 35-40 minutes, until tortellini is tender.
- Remove aluminum foil and cook for 5-10 more minutes.
- Remove, and let cool for 5-10 minutes.
